BIANCA
Like Anthony’s childhood spuntino — “a great piece of bread with mozz’, ricotta and basil” — the Bianca is classic and comforting. Genio’s cheeses are made the old-school way and meet the EU's high standards for quality: no growth hormones, no antibiotics.
This extremely delicate and complex cheese, produced in southern Italy. It would be impossible to replicate distinctive richness and flavor cheaply or quickly — so we don’t. This is the good stuff, and it’s totally worth it.
BROCCOLI RABE
A little bit bitter, a little bit briny — this is comfort food, Italian style. Balanced and complex, the Broccoli Rabe pizza is topped with friarielli, a broccoli rabe grown in southern Italy, and black olives from the Italian Riviera.
Grown in the hills around Mount Vesuvius, our broccoli rabe has a balanced, minerally flavor that is unique to this region and its volcanic soil.
PEPPERONI
Let’s be honest: It’s not a pizza party without pepperoni. Genio’s Pepperoni pizza is made with our signature high-hydration dough, local Italian tomatoes and tangy buffalo mozzarella. It’s Italian, it’s American — it’s Italian-American.
Hand sliced onto every pizza, Genio’s pepperoni is crafted using only salt and natural methods, with nothing synthetic or artificial, and no preservatives.
